Volcanic Treasures is a regional lot produced from selected lots delivered to the Coope Atenas mill in the West Valley area of Costa Rica. About 1300 small holder farmers are members of the cooperative, growing Catuai and Caturra varieties typical of the region at elevations ranging from 1100 to 1400masl. Honey process is well established in Costa Rica, which has very mature systems of processing coffee amongst its many micro mills. "Honey" refers to the technique by which a coffee is depulped but some level of mucilage (the fruit surrounding the seed) remains during the drying process. In Costa Rica, there are several levels to honey processing that denote how much mucilate is left on - black, red, yellow, and white are common. This lot is a white honey, meaning the least amount is left on the parchment while it dries.
